1 whole wheat vegan pie crust
1 container silken tofu

½ cup unsweetened coconut milk
1 ½ cups dark chocolate chips (Ghirardelli 62%)
- Prepare crust according to package directions
- Melt chocolate chips in microwave in 30 second increments (should take 1 minute total)
- Mix ingredients in blender until smooth
- Let set in freezer for 2-4 hours
