Vegan whole wheat pie crust
1 cup fresh pineapple, diced
1 scoop PCN vanilla (Pure Charge Nutrition 15% Discount Code- GreenZone15)
½ cup unsweetened coconut milk
4 frozen bananas
2 tablespoons unsweetened coconut flakes
(Optional) 1 Stevia packet for added sweetness
- Prepare pie crust according to package directions
- Blend bananas, milk, 1 tablespoon coconut flakes, protein powder and (optional) stevia until smooth (ice cream consistency)
- Stir in ½ cup pineapple
- Pour into pie crust, top with 1 tablespoon coconut flakes, ½ diced pineapple
- Place in freezer to harden for 30min-1 hour
*Note – Store leftovers in freezer in Tupperware container. When serving leftovers, let sit on counter for 30 minutes to soften.
